This study was undertaken to identify dietary patterns of Korean elderly people living alone, and to compare the quality of diet consumed. Data of 821 elderly people aged 65 years or older who were living alone, was obtained from the 2016∼2018 National Health and Nutrition Survey. The percentage energy intake from 24 food groups was calculated, and a cluster analysis was applied to identify dietary patterns. General characteristics, energy and nutrient intake, nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ) were analyzed. Dietary variety score (DVS) and dietary diversity score (DDS) were subsequently calculated. The rice-centered diet group and mixed diet group were characterized as consuming higher intake of rice and a wider variety of food groups, respectively. The mean age and percentage of participants living in rural areas were higher, whereas education level and monthly income were lower, in the rice-centered diet group (P<0.001 for all). Intakes of energy and all other nutrients (except carbohydrate and thiamine) were lower in the rice-centered diet group (P<0.001 for all). The NAR for all nutrients (except thiamine), MAR, and INQs (except thiamine and iron) were significantly lower in the rice-centered diet group (P<0.001 for all). The rice-centered diet group had significantly lower DVS (P<0.001) and DDS (P<0.001), as compared with the mixed diet group (P<0.001). Due to the insufficient energy and nutrient intake in the rice-centered diet group, it is necessary to develop nutritional monitoring and customized nutrition policies for these individuals.

The purpose of this study was to compare nutrition labeling use according to the gender and obesity degree of adolescents to help choose the healthy foods and improve dietary habits. This study surveyed the perception and use of nutrition labeling among 392 male and female high school students in Chungnam. It was found that 34.7% of the subjects read the nutrition labels, mostly for health reason. Calorie content was read the most among all components of nutrition labels regardless of gender or body mass index (BMI) status, especially among female students. Perception of nutrition labeling was 3.3 out of 5 points for all students, and there was no significant difference in scores between male and female students. However, there was a significant difference between the overweight group (3.4 points), normal group (3.3 points), and underweight group (3.1 points) (P<0.05). The frequency of reading nutrition labels by food group was highest for ramen, and lowest for fruits. Female students had significantly higher scores on the use of nutrition labeling for 8 food groups out of 12 groups compared to male students (P<0.05). In addition, the overweight and above group had significantly higher scores on the use of nutrition labeling for snack food and fruits compared to other groups (P<0.05). The proportion of students who received nutrition labeling education was 29.8%, and about half of students answered that such education and advertisement were necessary. These results suggest that nutritional education is needed to promote the use of nutrition labeling in adolescents.

The study examined the perceived health status, dietary habits, and health-related lifestyle habits of middle-aged men and women in Seoul and Gyeonggi-do areas. The survey was conducted on 670 individuals (320 men and, 350 women), aged 40∼64 years, in Seoul and Gyeonggi-do areas. The online and written data were analyzed using the SPSS WIN 25.0 program. Although there was a significant difference in the perceived health status (P<0.01), there were no significant differences in the subjective stress and the current disease status according to sex. For dietary habits, the scores for fruit intake (P<0.05), meat and fish intake (P<0.05), milk and dairy products intake (P<0.01), and seaweed intake (P<0.05) were higher in women than men. The scores for three-meal eating (P<0.05) and water intake (P<0.01) were higher in men than women. For the health-related habits, alcohol-drinking frequency, daily alcohol consumption, smoking experience, and daily smoking were higher in men than women (P<0.001). In contrast, caffeinated beverage intake, exercise frequency, and daily smart-phone, computer, and TV using time were similar in both sexes. The meal-eating time was faster in men than women (P<0.01). For dietary behavior changes, only appetite showed a significant gender difference (P<0.05). This study provides essential information on the perceived health status, dietary habits, and health-related lifestyle habits in middle-aged men and women. Nevertheless, further research and a practical nutrition program will be needed to solve undesirable dietary habits and improve the health and lifestyle of middle-aged adults according to sex.

The high caffeine intake by adolescents has been a concern. The purpose of this study was to examine the awareness and consumption of caffeine-containing foods among 443 high school students using a questionnaire. An analysis of the spending patterns of the students' weekly allowance showed that the amounts spent on purchasing caffeine-containing foods were higher for female students than male students (P<0.001). The scoring of the perception of caffeine was 3.1 out of 5, interest in the caffeine content of food was 2.6, consumption of caffeine-containing foods was 2.6, and usefulness of caffeine-containing foods was 2.7. The awareness of caffeine content in food was significantly higher in females (7.3 out of 11) than male students (6.7) (P<0.01). Approximately 59% of students perceived that the relationship between caffeine-containing foods and health, was harmful, and the experience of side effects after taking caffeine was significantly higher in female students than males. These side effects include heartburn (P<0.001), headache or dizziness (P<0.001), irregular heartbeat (P<0.05), and hands and feet shake (P<0.01). Caffeine-containing foods were purchased at convenience stores (62.1%). The factor considered when purchasing caffeine-containing foods was taste (72.2%), and the use of nutrition labeling for caffeine-containing foods scored 2.0 out of 5 points. When assessing the intake of caffeine-containing foods, the foods consumed more than once a week were in the order of coke, chocolate, chocolate milk, chocolate pie, and chocolate bars. These results suggest that it is necessary to prepare a caffeine-related nutrition guide improvement by sales management, and strengthen food labeling standards for the desirable recognition of caffeine and its safe intake by adolescents.

This study was carried out to investigate the effect of the addition of Taraxacum coreamm powder (TCP) (1%, 3%, 5%, 7%) on the quality of pound cake. The specific gravity of the pound cake increased, but the pH of the pound cake significantly decreased with the addition of Taraxacum coreamm powder. The weight of the pound cake slightly increased, whereas the volume and specific loaf volume decreased with the addition of TCP. The texture analysis showed that hardness, chewiness, and gumminess were higher with the addition of TCP than in the control group. The L and a value of the pound cake decreased, whereas the b value increased with the addition of TCP. The moisture content and the DPPH radical scavenging activities of the pound cake increased as percentages of TCP significantly increased.
