Synbiotics are a mixture of probiotics and prebiotics, meaning that the efficacy of each component is established for synbiotic agents. Probiotics microbial and prebiotics ingredients for the development of probiotics and prebiotics foods or neobiotic foods, including probiotics and prebiotics, can provide consumers with their own nutritional value instead of fresh cheese. The main food used as a means was cheese. Cheeses generally have a higher pH than fermented milk products, providing a more stable environment so probiotic bacteria can survive for a long time. Successful cheese development with probiotic will provide the cheese industry with a competitive advantage over existing products and contribute to the expansion of dairy products with better nutritional and physiological properties.

Porcine cumulus cell layers are thought to influence various fundamental functions during oocyte maturation. The expansion of cumulus-oocyte complexes (COCs) is known to highly correlate with oocyte maturation, fertilization, and embryonic development. In this study, we performed two dimensional electrophoresis (2-DE) and matrix-assisted laser desorption ionization-time of flight (MALDI-TOF) analysis using porcine COCs proteins. Porcine COCs were collected from ovary follicles and classified as the good-quality group and the poor-quality group based on cumulus cell layers around oocyte. The COCs protein samples were separated in a pH 3.0-10.0 IPG gels for the first dimension, and then 8%-16% SDS-PAGE gel for the second dimension. Gel image analysis was performed in protein spots between good- and poor-quality groups, and then differential protein spots were identified using MALDI-TOF analysis. There were more than 300 protein spots in the 2-DE gel image obtained from 1 mg protein samples of COCs. Five differential protein spots were identified by gel image analysis with more than 1.5-fold differences. All 5 protein spots were up-regulated in good quality group and revealed as transferrin, tight junction protein ZO-2, tubulin beta chain, meiosisspecific nuclear structural protein 1 and dynamin 1-like isoform 4 in good. Our results indicated the identification of 5 differentially expressed proteins in the porcine goodquality COCs and these protein profiles will make available important guides for porcine good oocyte selection for the production of in vitro embryos.

This study aimed to investigate the physicochemical traits, free amino acids, and fatty acid compositions of five different muscle cuts (loin, hind leg, neck, and foreleg) from Korean native black goat (KNBG). In a total, 21 castrated male KNGBs of 16 mon of age were reared with similar diets, conditions, and slaughtered. Results reveal that moisture content was lowest in rib compared to all tested groups (p < 0.05). Moreover, rib implied the highest lipid content compared to all cuts (p < 0.05). Protein and ash contents were lowest in the rib than all treatments except for the foreleg (p < 0.05). Shear force (kg.f) values related to meat tenderness did not show any significant differences among the five different cuts. Regards to free amino acid contents, glutamic acid was the highest in the neck (p < 0.05). The taurine and asparagine contents were highest in the foreleg (p < 0.05). The essential fatty acids; linoleic acid (18:2), and arachidonic (20:4) acid were highest in the meat excised from the hind leg (p < 0.05). Eicosatrienoic acid (20:3), and nervonic acid (24:1) were deemed important to brain functions highest in the hind leg (p < 0.05). Also, a similar trend was noted for polyunsaturated fatty acids (PUFA) contents in the hind leg (p < 0.05). Saturated fatty acids (SFA) were highest in rib compared to all treatments (p < 0.05). Taken together, our results indicate that proximate compositions, lipid contents, free amino acids, fatty acid compositions vary considerably with the anatomical locomotion of the muscles from KNBGs which could be a stratagem for consumer's preference of the meat and given nutritional and functional profile elsewhere.
