To know the most ideal time of slaughter and the method of improved feeding and management of hogs for quality pork production, twenty Berkshire piglings were slaughtered in two month intervals of age and the water holding capacity(W.H.C) were measured. The results obtained are as follows; 1. The whole average of W.H.C. of Bacon parts was significantly higher than that of Ham parts. 2. The maximum W.H.C. was obtained in the pork of two months of age in both parts of pork, and followed by gradual decrease with the increase of age. 3. The whole average of W.H.C of Bacon parts and Ham Parts were 66.4%(65.6∼67.8) and 66.1%(63.8∼68.1), respectively.
