Studies on the Effects of Pre - slaughter Fasting on the Carcass Yield and Quality of Rabbits .

This experiment was conducted to determine the effects of ante-mortem fasting with and with no water on the carcass yield and meat quality of rabbits. Seventytwo rabbits were grouped into 9 groups. The first group (control) was slaugtered immediately after off-feeding, and the groups 2, 3, 4, and 5 were slaughtered after 24, 48, 72 and 96 hours of fasting with water, and the groups 6, 7, 8, and g were slaughtered after 24, 48, 72, and 96 hours of fasting with no water. During the fasting period, the live weight shrinkage and water consumption in the fasting with water groups were measured. After fasting, 4 rabbits in each group were used to determine the live weight regain by the free access to feed and water for 3 hours. The other 4 rabbits in each group were slaughtered immediately after fasting and the following items were determined: 1). Dressing percentage. 2). Carcass chilling shrinkage. 3). Weight of full viscera and G.I. tract, liver and adrenal glands. 4). Chemical composition of muscle, sugar content of muscle, liver and blood, and urine nitrogen. 5). Muscle pH, loin eye area and water holding capacity of longissimus dorsi muscle. 6). The correlations between live weight shrinkage and dressing percentage, and between dressing percentage and loin eye area. 7). Histological studies on the liver tissue. The results obtained are summarized as follows: 1. The live weight shrinkage was 6.37% in 24 hrs fasting, and 13.84% in 96 hrs fasting with water. During 96 hrs fasting with water, about one halt (48%) of the total shrinkage occurred after 24 hrs of fasting and 88% of it was occurred after 48 hrs of fasting. 2. In the case of fasting with no water, 4.4% of live weight was shrinked in 24 hrs and 10.99% in 96 hrs which was apparently lower than in the fasting group with water. The live weight shrinkage of 6.37% in 24 hrs fasting with water was comparable to 6.45% in 48 hrs fasting with no water. 3. The tissue shrinkage was 0.2% in the 24 hrs fasting and it was 1.61% in the 96 hrs fasting with water, whereas it was 0.59% and 2.27%, respectively in the fasting with no water which is apparently higher than in the fasting with water. 4. The water consumption of the rabbits during the fasting period with water was decreased as the fasting period was prolonged. The water consumption was 2.65 g per 100 g of the initial body weight in the first 24 hrs, whereas it was 0.94 g at the end of 96 hrs fasting. 5. The regain rate which was obtained by the free access to the feed and water for 3 hrs immediately after fasting was gradually decreased as the fasting period was prolonged. Twentyfour hrs fasting with water group recovered 52.4% of the weight loss whereas only 28.33% was recovered in the 96 hrs fasting with water. In the fasting with no water groups, it was 80.21% and 35.93% respectively. 6. The average dressing percentage was 43.03% in the control and high dressing percentages(46.03% and 44.47%) were obtained in 24 hrs and 48 hrs fasting with water. The dressing percentage w-as 39.24% in 96 hrs fasting with water, but it was 33.81% in the same period of fasting with no water. The dressing percentage was decreased significantly as the fasting time passed, and was higher in the fasting with water groups than in the fasting with no water groups. 7. The carcas chilling shrinkage was 3.30% in the control grops and as the fasting time passed, the carcass chilling shrinkage was increased, but it was not significant. Although it was not significant, the larger carcass chilling shrinkage was obtained in the carcass of fasting with no water groups. n. The viscera and G.I. tract weight were decreased as the fasting period was prolonged and the greater decrease was observed in the fasting group with water than with no water. The similar patterns of weight decrease was noted in the live weight loss in which the greater weight loss was occurred in the early part of the 96 hrs fasting with or with no water. 9.
