농업 인구 감소, 재배 환경 변화, 이상 기후 현상으로 인해 쌈채류의 가격 등락폭이 매우 커지고 있다. 이에 따라 대표 쌈채류인 상추류의 효과적인 재배를 통해 공급 가격 안정화가 요구된다. 더불어 영양성분을 강화한 표준 유용미생물(effective microorganisms; EM) 분말처리에 따른 작물 내 유효성분의 함량을 분석하여 인체 내 미치는 영향을 예측하고 작물의 친환경 재배의 가능성을 관찰하고자 하였다. 청상추, 로메인상추, 양상추를 대조군, 일반비료군, 영양성분을 강화한 EM 분말을 처리하는 실험비료군으로 나누어 8주간 재배하고 엽장, 엽폭, 생체중량, 엽록소, 폴리페놀, vitamin C 함량을 측정하였다. 청상추, 로메인상추, 양상추에 영양성분을 강화한 EM 분말을 처리한 결과 모두일반비료를 시비한 경우보다 엽장과 엽폭의 길이, 생체중량이 증가하였다. 실험비료 시비 시 대조군과 비교하여 보면 청상추는 엽록소 a 함량이 2배 가까이 증가하였고, 청상추의 폴리페놀함량은 22% 유의적으로 더 높게 측정되었으며 로메인상추와 양상추의 vitamin C 함량은 각각 40% 유의적으로 증가하는 결과를 보였다. 엽록소, 폴리페놀, vitamin C 함량이 높은 상추를 섭취함으로써 항산화, 항염을 비롯한 다양한 인체 내 긍정적인 효과를 기대할 수 있다. 더불어 보다 쉽고 간편하게 고품질의 유기농 생산을 가능하게 할 것으로 생각된다.
The price fluctuations of ssam vegetables have seen an increase due to the decline in the agricultural population, changes in the cultivation environment, and abnormal climate phenomena. To stabilize the supply prices, effective cultivation of lettuce, a representative ssam vegetable, is essential. By analyzing the content of the active ingredients in crops based on the application of effective microorganism powder with enhanced nutrients (EM), we predicted the effects on human health and assessed the potential for eco-friendly cultivation. Green leaf lettuce (GLL), romaine lettuce (RL), and head lettuce (HL) were divided into three groups: the control group, the general fertilizer group, and the experimental fertilizer group. When GLL, RL, and HL were treated with the EM powder, the length, width, and weight of the leaves increased. The chlorophyll a in GLL approximately doubled compared to the control group. Also, the polyphenol of GLL was 22% higher, and the vitamin C content of RL and HL was significantly increased by 40%. Eating these lettuces with high chlorophyll, polyphenol, and vitamin C content can have various positive effects on human health, including antioxidant and anti-inflammatory benefits. This process is also expected to make the production of high-quality organic ssam vegetables easier and more efficient.
