Objective: Liver is an organ which has a major function in lipid metabolism. The process of lipid metabolism are consist of catabolism and anabolism fatty acid via β-oxidation, which has reactive oxygen species (ROS) as an adverse substance. The escalation of ROS can cause stress oxidative condition that marked by malondialdehyde (MDA) level in the liver tissue. The aim of this study was to determine the effect of probiotic beverage from dates and kefir grains to reduced liver MDA level in hyperlipidemic rat. Methods: This study was used experimental method with post-test only control group design. The sample of this study were male wistar rats (Rattus norvegicus) aged 2~3 months and weight 200~300 grams. Group A was fed ad libitum. Group B and C were given quail egg yolk with dose of 5 mL/200 grams of body weight for one month by the sonde method. Group C was given the probiotic beverage with dose of 5 mL/200 grams of body weight after the administration of quail egg yolk for one month. At the end of the study, rats were terminated. The liver organ were examined for MDA level. Results: Mean of MDA level on each group consecutively were 1,67 ± 0,13799 nmol/dL, 10,08 ± 0,10149 nmol/dL, and 2,7 ± 0,35511 nmol/dL. Oneway ANOVA showed significant differences in MDA level between three groups with p = 0.00. Bonferroni post-hoc test showed significant comparison between these groups with p = 0.00. Conclusion: Probiotic beverage from dates fruit and kefir grains is significantly reduce the MDA level of hyperlipidemic rats (p < 0,05).
