근대 일본의 식탁풍경 -『식도락(食道樂)』을 중심으로-

日本政府は西歐の資本主義に基づいた國家統治體系を築いていく過程で社會各部門の近代化政策を取っていった。近代國家へ移行していく過程で個人の身體は勞動力の根源であり軍事力增强の資源としてまで意味が擴張される。これが政府の軍隊の食生活に關心をもつ理由であったが日淸戰爭以後國民を軍事力の資源として活用しながら政府は「標準食糧案」を作成しこの政策を全ての國民に施行しようと圖った。問題は標準食糧案の核心である'一日活動に必要な榮養'をどのように各家庭の食生活へ反映させるようすべきかであった。これはその當時登場し始めた大衆媒體も關心をもつ問題であった。特に『食道樂』では料理をする者(主婦)、料理を食べる者(家族)という二つの側面から食育を語る中で主婦として自分の自覺を通して榮養を重視する料理をすることを求めている。ところがここで注目すべきことは近代家庭の必須條件である主婦の料理が文明國家建設の一軸として示されているという点である。

Japanese Government adopted a modern policy in every section of society while they were constructing their governing system based on Western Capitalism. In this process, they found a citizen’s body meaningful resources to increase military power as well as labor force. This is the reason Japanese Government intervened in the army’s dietary life. After the Sino-Japanese War it needed more military man power than ever. An so it made ‘Model Plan of Food’ and tried to introduce it to all people. The point was how they led each family to take a nutrition necessary in a day, which was strongly emphasized in it. The media, also, which began to appear often dealt with this topic. Especially the Novel ‘Gourmandism’, which was written by Kensai Murai, developed the food education in the two respects of ‘the woman making food(=house wife)’ and ‘the person eating food’ and emphasized the house wife’s self-consciousness to make much of nutrition. And it should be noted that it suggested house wife’s cooking essential in modern family is a important factor in constructing a civilized nation.
