본고에서는 음식문화를 접근함에 있어 음식물의 재료가 되는 농수산물 등에 대한 식재료적 물산지 토대와 그 공급에 대한 관심의 필요성에 따라 궁중의 과물(果物) 공급 상황에 대해 살펴보고자 하였다. 궁중의 과물 공급은 ‘장원서(掌苑署)’라는 기관이 담당하였는데, 본고에서는 정조 18년(1794)에 편찬된 것으로 추정되는 장원서의 업무 및 행정 제반 사항을 기록한 『장원서등록』을 분석함으로써 장원서의 역할 및 제반 사항과 각 도별 과물의 분정 현황, 그리고 이를 통해 이루어지는 궁궐 내의 과일 공급 상황에 대해 살펴보았다. 『장원서등록』의 내용은 크게 다섯 가지의 범주로 구분될 수 있었다. 직원 구성과 관리방식, 과물 공납(貢納)에 관한 업무 기록, 장원서의 재정 관리, 부서별 역할, 기타 운영 및 규정이 그것이다. 본고에서는 이러한 분류에 따라 『장원서등록』의 구성과 체제를 설명하였다. 다음으로, 『장원서등록』에 기록된 각 도별 과물 분정 현황을 살펴본 결과, 전국 각 도에 분정한 과일의 종류와 개수 뿐 아니라 각 과일의 상정가까지 기재되어 있어 각 도별 물산 상황 및 당시 과일의 가치까지 파악할 수 있었다. 마지막으로, 거두어들인 과물을 왕실에 어떻게 공급하였는지를 월별 제철과일[節果]을 올리는 것에 대한 기록인 천신식(薦新式), 각 전(殿)에 정기적으로 진상하는 내용인 공상식(供上式) , 국가의 주요 절일(節日)과 명일(明日)에 필요한 진상을 기록한 물선진상식(物膳進上式) 을 통해 구체적으로 볼 수 있었다.

The purpose of this study is to understand fruit supply to the royal court in Joseon Dynasty. The office in charge of fruit supply was called ‘Jangwonseo(掌苑署). Jangwonseo took the charge of gardening, animal and birds as well as fruits management. This paper reviewed The Record of Jangwonseo(掌苑署謄錄) which contains general information and work manual of Jangwonseo. Concretely, The Record of Janwonseo covers (1) the rank system of officials and basic information about the office, (2) the way of fruit supply to the royal court and government, (3) financial management of the office, (4) six kind of departments of the office and their tasks, (5) additional information about administration. This paper focused on its role of fruit management and analyzed its works such as managing fruits tribute from various part of the country, and providing fruits to the royal court. Moreover, this paper compared this information to the records of local product in geography book at that time to understand how fruit tribute was related with local vegetation. Another interesting point was that what kinds of fruits were offered which season and which special day. For example, on New Year’s day, Jangwonseo provided pears, chestnuts, persimmons, dried persimmons, pomegranate, mandarins, and quinces. As a result, this paper approached further understanding about fruit supply, such as which kinds of fruits were used at that time, how many fruits were provided, and when the fruits were provided.
