Prospect of Domestic Soybean Usage in Soymilk Industry

Health effects of soybean, widely has been covering by mass media, encourage people to consume soy foods daily for their own good. It is another story when industry considers domestic soybean as a raw material for soy foods. Hurdle comes from the price competitiveness of domestic soybeans against imported ones. There is something special in soybean, and soymilk in Korea has not been just another beverage that can be replaced anytime and anywhere. Present status of soymilk industry is described as various aspects as possible so experts in soybean plant breeding can understand and find everything that really needs to be done for the industry. Highlighted components and important characteristic of soybean are described, and market status of soymilk is followed. Technical considerations for making better soymilks are surveyed with consumers` recognition, too. A few suggestions are listed with strong expectations.
