효모의 발효과정에 관련된 여러 반응과 효소에 대한 인삼 사포닌의 영향을 조사하여 다음과 같은 결과를 얻었다. 10^-4% 10-2%의 인삼 사포닌이 함유된 배지에서 배양한 효모에서 발생한 CO_2의 양은 대조보다 많았으며 배양액에서의 농도가 10^-3%일 때 CO_2의 발생양이 가장 많았으며 이 농도에서 무기인산의 흡수와 glucose 감소 속도도 대조에 비해 크다. [U-^14C]--glucose와 10^-3%의 인삼 사포닌을 함유한 배지에서 배양한 효모균에서 해당작용의 중간물질을 분리, 분석한 결과 fructose 6-phosphate의 방사능은 대조보다 1.6배 많았고 pyruvate의 방사능은 대조의 60%정도로 감소하였다. 효모의 hexokinase, phosphoglucose isomerase, pyruvate kinase 그리고 pyruvate decarboxylase에 미치는 인삼사포닌의 영향을 시험관에서 조사한 결과 반응액에서의 사포닌 농도가 10^-5%일 때 가장 큰 활성을 나타내었다. 이상과 같은 실험결과는 인삼 사포닌이 여러 호소를 비 특이적으로 활성화한다는 주등의 주장을 재확인하는 것이며 이와 같은 인삼 사포닌의 비 특이적 효소 활성화 효과가 효모의 발효에 관여하는 효소들을 활성화 함으로서 발효속도가 촉진된 것으로 생각된다.

It was attempted in this study to investigate the effect of ginseng saponin on several glycolytic enzymes of yeast cell and the following results were obtained. The amount of CO_2 formed during the incubation of yeast cells in medium conaining saponin fraction of Panax ginseng C.A.Meyer was greater than of control cells and found that the CO_2 formation was greatest when the cells were grown in the medium containing 10^-3% of the saponin fraction, at which the uptake of inorganic phosphate and glucose consumption were also increased. Radioactivity study of serveral glycolytic intermediates of yeast cells cultured in the medium containing [U-^14C]-glucose showed that the radioactivity of fructose 6-phosphate of test cells was as much as 1.6 times that of control group. On the other hand, the radioactivity of pyruvate of test cells was considerably decreased compared to control. Investigation of the effect of ginseng saponin on yeast hexokinase, phosphoglucose isomerase, pyruvate kinase and pyruvate decarboxylase in vitro showed that the maximum activities of the above enzymes werer observed when the concentration of ginseng saponin was 10^-5% in the reaction mixture. It seemed that the ginseng saponin stimulates both glycolytic enzymes such as hexokinase, phosphoglucose isomerase and pyruvate decarboxylase significantly.
