In order to study the effects of blood volume, electrolytes concentration, maximal oxygen uptake in dietary survey of middle-aged 37 women, who aged 30-40 years were checked by medical process, dietary survey and exercise stress testing. Subjects were divided into the three groups that were protein(protein: 119%, fat: 103.8%, carbohydrate: 99.7%), fat(protein: 86.3%, fat: 113.6%, carbohydrate: 72.9%) and carbohydrate (protein: 97.3%, fat: 95.4%, carbohydrate: 110.8%). Statistical analysis was performed using analysis of variance oneway ANOVA test. Major findings and conclusion are as follows. In blood volume, hemoglobin and hematocrit in the fat group was significantly higher than that of protein group(p<0.05). In electrolytes concentration, potassium(K) in the fat group was significantly higher than that of carbohydrate group(p<0.05). In aerobic exercise capacity, ventilation( VE) in the fat group was significantly higher than that of carbohydrate group(p<0.05). These results indicate that, hemoglobin, hematocrit, potassium, ventilation in the fat group was significantly higher than that of protein group and carbohydrate group. Improved body mass resulting from better nutritional management and growth may have contributed to the maintenance of physical fitness.
