Oysters in Korea are consumed in a special way for the purpose of making kimchi as well as for the general consumption. Nowadays the changes in consumers' interest and the timing of oyster production are observed and this induce to changing pattern of the consumption of oysters. The present study focuses on changes in oyster consumption behavior depending on the demographic characteristics of consumers by dividing the consumption patterns into general consumption and special consumption. The raw data of the ‘2018 Consumption Behavior of aquaculture products’ conducted by the Korea Maritime Institute is used and Ordered Logit model is applied for the empirical analyses. Estimation results indicate that consumption is influenced by household type and a significant relationship between oyster utilization for making kimchi and oyster consumption is revealed.

The purpose of this study is to derive the price flexibility coefficients of planted area for strawberry and tomato. To derive the price flexibility coefficient, this study first estimates the relationship between production and its inputs(planted area, fertilizer, and labor) and then estimates the relationship between price and production using autoregressive distributed lag(ARDL) model. The price flexibility coefficient of planted area can be obtained by multiplying the estimated coefficient of planted area on production by the estimate coefficient of production on price. The results show that a 1% increase in planted area leads to 1.945% and 1.029% increases in production for strawberry and tomato, respectively. In addition, a 1% increase in production increases price by 0.959% for strawberry and by 0.344 for tomato. Hence, a 1% increase in production causes price to increase by 1.856% for strawberry and by 0.354% for tomato.

This study aims to identify the main factors influencing the revitalization of festivals for local agri-food, to measure their relative importance, and to determine the priority of those factors. Data were collected from 95 adults visiting Goesan red pepper, Danyang garlic, and Jinan watermelon festivals. Data were analyzed by the method of Best-Worst Scaling Profile Case(BWS Case 2). The results showed that 'rural culture' and 'convenience' are main important attributes and 'differentiation from other festivals' and 'quality and diversity of traditional food using agricultural products' are first two important levels among 12 levels. Considering the results of the analysis, the implications for the success and revitalization of the festival for local agri-food were derived. First, we need to create festival contents reflecting the cultural, geographical, and traditional characteristics of rural areas and internalize the success stories from other local, national and international festivals. Second, it is necessary to supply high quality of traditional foods and agricultural products at a low price for visitors. This study is expected to provide useful information for the local government and stakeholder to establish revitalization strategies based on the priority for the festival for local agri-food.

This study conducts a quantile regression analysis in order to estimate the extent to which the propensity to consume food influences Home Meal Replacement(HMR) buying behavior of consumers using a 'survey data of Consumers' Attitude toward Processed Food in 2017'. Factors for the propensity to consume food had been firstly extracted through principle component analysis, and those factors were classified as “pursuit of open consumption”, “pursuit of high-quality and diversification”, “pursuit of safety and relief”, and “pursuit of home-dining”. Along with the extracted factors, quantile regression analysis has been conducted to scrutinize the effects of the propensity to consume food variables on the dependent variables, “expenditure on HMR”, “proportion of HMR in the total food expenditure”. It is found out that “pursuit of open consumption” and “pursuit of safety and relief” were shown to be statistically significant only for 0.6 and 0.8 quantile of the “expenditure on HMR” variable, while “pursuit of high-quality and diversification” was only statistically significant for the highest quantile of the “proportion of HMR” variable. Coefficients of “pursuit of home-dining” showed a decline in both dependent variables. To sum up, it is required for food to identify the extent to which the propensity to consume food influences HMR buying behavior of consumers, and establish segmentalized product development plans.

Meal-worms, protaetia brevitarsis seulensis larvae, adult crickets and beetle larvae were newly registered on Korean Food Standards Codex as food in 2016. Since then, the number of farmers producing edible insects began to explode, and edible insects were expected to be the most promising market in the insect industry. However, the edible insect-producing farmers has been suffered financially since edible insect sales have started to decline in 2018. So, this study will analyze management efficiency of the edible insect-producing farms using Data Envelopment Analysis(DEA) to minimize the financial damage of the farms. And the purpose of this study is to suggest the directions of policy on edible insects through DEA results. Followings are the directions of policy on edible insects as a result of this study. First, the result shows that meal-worm-producing farms manage their farms most efficiently among the edible insect-producing farms. So, if consumer demand on meal-worm only increase, meal-worm market will be the most stable market. To increase the demand on meal-worm, a consumption monitoring system for meal-worms should be established, and the consumer's preferred form of intake should be identified and supplied. Second, protaetia brevitarsis seulensis larvae farms were figured out to be the most inconsistent production methods or processes. In other words, this insect is the most differentiated among edible insects. Therefore, it is necessary to establish a strategy for segmented market by identifying consumer's preference attributes(e.g, price or nutrition). Third, as adult cricket-producing farms were shown to be less efficient due to their low overall input, the government's financial support for insect-farms should be made more active for farmers who produce adult crickets than other insects.

In the past two to three years, the regional food plan is rapidly spreading to 46 places, and the government plans to spread to 100 local governments by 2022. Although agricultural extension agency are responding to various forms, there are insufficient studies on actual conditions analysis and future plans. This study examines the contents and level of local food policy by using monitoring indicators that reorganized 37 actions of Milan policy agreements into 31 actions in 4 categories for 8 local governments that established food plans with government support in 2018. This study analyzed the function and the role sharing system between the agricultural administration office and the agricultural technology center, and suggested the role and task of the agricultural technology center for activating the food plan.
As a result of the monitoring, the main tasks of the Agricultural Technology Center to promote the food plan are:food plan education for farmers, local food and urban farming-based community kitchens, cities and rural linked community-supported farming, food life education and rural experience education, strengthening of planned production system, operation of local certification system, suggest of fair price and appropriate income standards, and operating the food information platform. The functions and roles of the Agricultural Technology Center were less importance in the Rural Food Plan and the Urban Food Plan, whereas the Agricultural Technology Center was divided between the Agricultural Administration, Agricultural Technology Center, and Foundation. In order to cope with the spread and advancement of the food plan, the rural guidance project should be shifted from the center of 'extensions for special farmers' to the ''sustainable food system for the whole nation'.
