The objective of this study was to examine the antioxidant activities of polysaccharides from cheonggukjang and Puerariathunbergiana-cheonggukjang. The yields of polysaccharides from cheonggukjang (PSC) and polysaccharides from Pueraria thunbergiana-cheonggukjang (PSPC) were 8.01%, and 7.53%, respectively. The total sugar content of PSPC (72.57 g/100 g)was higher than that of PSC (65.29 g/100 g). The total protein contents of PSC and PSPC were 20.53 g/100 g, and 21.68 g/100 g, respectively. The uronic acid content of PSPC (15.84 g/100 g) was higher than that of PSC (2.72 g/100 g). The hexosamine contents of PSC and PSPC were 1.09 g/100 g, and 2.04 g/100 g, respectively. The DPPH radical scavenging activities of PSPC improved with an increase treatment concentration. The ABTS radical scavenging activities of PSPC was 12.30-87.64% (1-5 mg/mL) higher than those of PSC. The reducing power and ferric reducing antioxidant power of PSPC were 0.18-0.93, and 0.07- 0.54 mM, repectively. In conclusion, we provided experimental evidence that polysaccharides from cheonggukjang and Puerariathunbergiana-cheonggukjang have potential as functional materials.

This study deals with hyaluronic acid market analysis which composed of revenue and demand forecasting. The global market for hyaluronic acid was estimated at US$ 1.69 billions in 2012, and is expected to reach US$ 2.42 billions by 2016. In 2012, the Americas dominated market, where the major contribution was from the US, and this trend is expected to continue during the forecast period. The Americas was followed by the Asia-Pacific region. Nationally the US was the leading hyaluronic acid market with an estimated US$0.78 billion in 2012 and a projected US$1.20 billion by 2015. The Japan represented the second biggest market for hyaluronic acid. Most of hyaluronic acid substances were used as an additive to cosmetics, medical product, or cosmetic filler. The global hyaluronic acid market is driven by the steadily growing aging population and the increasing consumer awareness about hyaluronic acid. In spite of the several drivers, the intense pricing competition among the vendors will considerably lead to a reduction in the price of the hyaluronic acid products. However, because of the presence of several drivers and emerging trends, the future of the global hyaluronic acid market is expected to be promising during the forecast period.

The oral drug delivery system using polymeric micelle was limited due to its instability caused by the gastric acid and various enzymes. To overcome these problems, we prepared chitosan/PVP (Polyvinypyrrolydone) (CPM) microspheres according to the stirring speed by W/O emersion method. The physicochemical characterization of CPMs were analyzed by scanning electron microscope (SEM), dynamic light scattering (DLS), thermo-gravimetric analyzer (TGA) and FT-IR, The SEM results showed that the morphology of CPM was fine spherical shape. Furthermore, SEM and DLS results showed that the size and surface area of CPM were decrease to the increment of stirring speed. The thermal stability of CPM was enhanced than raw chitosan andPVP. These results revealed that CPMs are expected to good candidate in the oral delivery system fields.

The characteristics of water soluble chitosan (WSCs), with Allium chinense was investigated by antioxidant activity. This study was determined total polyphenol content, DPPH radical scavenging activity, ABTS radical scavenging activity, and reducing power from WSCs with Allium chinense. The concentrations of total polyphenol were 19.3 mg/g at distilled water, 8.8 mg/g at Ethanol, and 13.1 mg/g at Methanol, respectively. DPPH radical scavenging of Allium chinense showed to the highest rank at distilled water extract. Also, that``s the highest at distilled water extract in ABTS radical scavenging activity and reducing power result. Synergistic effect were showed at the ABTS radical scavenging activity and reducing power of WSCs with Allium chinense. But only synergic effect for reducing power result was also showed at distilled water extract.

One of well known methods for degrading polysaccharide is to use the reactive oxygen species. The fenton reaction can produce aggressive OH-radical, which is one of potential species of ROS, from hydrogen peroxide in the presence of catalytic metal ions. Ascorbic acid acts as a potent antioxidant necessary to cope up these oxidative damages. We found that ascorbic acid also exhibits pro-oxidant characteristics in the presence of catalytic metal ions, which can reduce the redox-active metal ions. Active size of molecules was obtained via degradation of higher molecular weight chitosan and hyaluronic acid, to obtain such active molecules, fast digestion was performed based on fenton reaction to determine the anti-oxidant activity of these molecules. Our results indicated that lysates from both the parental polysaccharides possess significant radical scavenging activity which proves that chitosan and hyaluronic acid are good anti-oxidants in terms of scavenging free radicals.

The purpose of this research is to investigate activation of antibiotics toward livestock disease E. coli causing clinical disease and to apply OCHT to animal medicine for piglets diarrhea, by using OCHT made by raw material of chitosan. To solve the problem, after the production of OCHT controlled for the superior antibiotics, we selected OCHT with optimal physical state according to the laboratorial anitibiotics test. Lastly,the chosen OCHT is tried to be tested toward the piglets with diarrhea.Firstly, for the production of OCHT containing the optimized antibiotics, 3 types of OCHT which is divided according to the possession of molecule scope from oligosaccharids 1 to 6 (OCHT-1), 7-14 oligosaccharides range (OCHT-2), and 1-16 oligosaccharids range (OCHT-3) after disassembling raw material Chitosan with 96% of DAC into Chitosanase is prepared. And the OCHT is used for testing validity of laboratory and field. After the comparison among the laboratorial antibiosis toward the 26 types of E. coli based on different blood serum seperated form piglets with diarrhea. Therefore, OCHT-3 is finally chosen for the manufacturing convenience for the later product manufacture.In the concentration scope between 0.0001~0.5% of chosen OCHT-3, the density of E. coli of OCHT-3 significantly decreased when it is touched by E.coli type, in 1 hours regardless of density. After 12~24 hours, no gathering of E. coli was shown. (p<0.01). For the field applicability test on piglets with diarrhea toward OCHT-3, the assassement on the curing effect had been done 3 times a day (morning, noon and evening) for 7 days through the oral injection. It took maximum 4 days for treatment and the amount of OCHT for curing is minimum 2 mg to maximum 7.5 mg. Moreover, the dose for prevention is within 0.0001~1% (p<0.01). Therefore, OCHT is proved to be a natural antibiotics showing superior antibacterial and curing effect, regardless of the type of E. coli which shows differences on synthesized antibiotics tolerable germ and intestine toxic (p<0.01). In conclusition, OCHT (Product Name: EPECTROL-3) is a natural polysaccharose not showing the negative point of synthesized antibiotics as tolerance. In terms of antibiotics, OCHT contains selective molecule amount and physical properties. Also, OCHT was expected to be a natural antibiotics which can be applied to the stock raising industry.

A total 114 E. coli isolates from 73 samples during the period from 2012 to 2013 were obtained. Isolates were confirmed asbeing multidrug resistance (MDR) bacteria isolates showed resistance. Resistance to penicillins was found in penicillin (100%), ampicillin (88%), amoxicillin (89%), oxacillin (100%), ticarcillin (53%), aztreonam (52%), ticarcillin/clavulanic acid (56%) and imipenem (33%) of isolates. The blaTEM genes were detected in 100 (100%) of the 100 ampicillin-resistant isolates. We screened for antimicrobial effect of organic iron mixed chitosan oligosaccharide (Fe-OCHT, Product Name: EPECTROL-3) on multidrug-resistance isolates associated with multidrug resistance in E. coli from feces (73 samples) on mares. We evaluated the antimicrobial activity of organic iron mixed chitosan oligosaccharide against 3 multidrug-resistance E. coli which showed resistance over 15 different antibiotics. The chitosan oligosaccharide (OCHT) inhibited the growth of multidrug resistance E. coli isolates at a concentration of 1 μg/ml in 24 hours. Also, Fe-OCHT showed a significant antibacterial activity against multidrug resistance E. coli isolates at a concentration of 100 μg/ml in 5minutes. Fe-OCHT showed better antibacterial activity than the OCHT. Consequently, we confirmed that Fe-OCHT significantly inhibited multidrug resistance E. coli isolates and might be selected as a more effective natural antibiotics for diarrheal treatment.

In this study, we investigated whether it is possible to substitute the inorganic zinc of chitosan oligosaccharide substrate organic zinc. We investigated the quality characteristics of egg produced from laying hens with non-supplemented diets or diets supplemented with organic zinc on chitosan oligosaccharide. Organic-zinc was obtained from substrate of chitosan oligosaccharide. Organic zinc or non-organic zinc were mixed normal laying hen diet. Laying hens were fed diet for 45 days containing powdered chitosan oligosaccharide-Zn, inorganic zinc or normal feedstuff. During the experimental period, organic zinc group increased the egg shell thickness, egg heights and lymphocyte compared to inorganic zinc or aminated form products (p<0.05). And, edible weight and yolk colors were no significant difference. But, each effectiveness are different from organic-zinc concentration to feeding period. It was investigated that organic zinc had equal or more effects compared with inorganic zinc or normal diet. These results suggest that organic zinc could be used as substitute for inorganic zinc as well as the supplement of laying hens diets to produce functional eggs.
