The characteristics of water soluble chitosan (WSCs), with Allium chinense was investigated by antioxidant activity. This study was determined total polyphenol content, DPPH radical scavenging activity, ABTS radical scavenging activity, and reducing power from WSCs with Allium chinense. The concentrations of total polyphenol were 19.3 mg/g at distilled water, 8.8 mg/g at Ethanol, and 13.1 mg/g at Methanol, respectively. DPPH radical scavenging of Allium chinense showed to the highest rank at distilled water extract. Also, that``s the highest at distilled water extract in ABTS radical scavenging activity and reducing power result. Synergistic effect were showed at the ABTS radical scavenging activity and reducing power of WSCs with Allium chinense. But only synergic effect for reducing power result was also showed at distilled water extract.
