본 연구는 한식의 세계화 정책에 힘입어 한식 레스토랑 산업에서도 세계화의 일환으로 한식공간문화를 알리고자 서울에 있는 고급 한식 레스토랑의 공간연출의 특성을 밝히는데 목적이 있다. 이에 본 연구의 대상은 2012년부터 2013년까지 한국의 최초 레스토랑 평가서인 블루리본 서베이에서 인테리어가 좋은 곳으로 선정된 서울에 위치한 한식 레스토랑으로 한정한다. 본론에서는 한국의 전통 공간적 특성과 한식레스토랑의 고찰로 전통 공간의 구조와 연출측면을 살펴보고 한식 레스토랑의 정의 및 유형을 밝힌다. 한식 레스토랑에서 전통과 현대 디자인 요소의 도입여부에 4 단계에 의해 전통식과 현대식으로 나누고 그에 따른 공간구성요소를 고찰한다. 이에 공간구성요소를 구조측면과 연출측면으로 나누어 색상, 형태, 재질, 재료, 패턴 등을 고찰한다. 분석 방법은 고바야시 이미지 스케일의 도입하여 서울의 고급 한식 레스토랑의 공간 연출의 표현에서 있어 전통과 현대의 디자인요소에 관한 분포도 도출하여 공간연출의 특성을 도출한다. 결론에서는 한식 레스토랑의 세계화 및 대중화를 위한 공간 연출 특성을 총체적으로 정리한다.

The objective of this study is to identify the characteristics of space display of high class Korean restaurants in Seoul for the purpose of publicizing the spatial culture of Korean food as driven by the globalization policies of Korean Food. To this end, the study will target Korean restaurants located in Seoul only limited to those selected as the best interior design space by the ‘Blue Ribbon Survey’, a very first documentation of restaurant evaluation in Korea from 2012 to 2013. In the main text, the study reviews the structure and display directions of traditional space by considering Korea’s traditional spatial characteristics and the Korean restaurants thereafter identifies the purpose and patterns of Korean restaurants. According to the traditional characteristics and introduction of modern design elements of the Korean restaurants, they were categorized into the traditional style and the modern style by 4 stages and discuss the spatial construction elements accordingly. Following to the categorization, the spatial construction elements were sub-divided into the structural aspect and the display direction aspect to discuss such as color, shape and materials. As the analytical method, the study had introduced the Kobayashi Image Scale to derive the distribution map in connection to the traditional and the modern design elements in presentation of spatial display direction in the high level Korean restaurants in Seoul, and infer the characteristics of spatial display direction. In conclusion, the characteristics of space display direction of the Korean restaurants were summarized on the whole for globalization and popularization of the Korean restaurants
