1Nutrient Contributions of the Five Meal Components in School Lunch: Entree, Milk, Vegetable/Fruit, Bread/Grain, and Miscellaneous

This retrospective study was designed to evaluate the nutrient contributions of the five meal components of school lunch menus planned for elementary students in two school districts (District A and B) in the Midwestern state of the United States. The 4-week cycle menu was planned for two time periods (Period 1 and Period 2) following guidelines for NuMenus and general menu planning principles. Menu components of planned and served menus for two time periods were analyzed using Nutri-Kids(TM). No significant differences in the nutrient content of between Periods 1 and 2 were found for District A. District B served significantly more vitamin A and total fat in Period 1 and significantly more calories, iron, vitamin A, protein, and total fat in Period 2 than was planned. The major nutrients provided by the entree component included protein, calories, cholesterol, total fat, saturated fat, and sodium. Milk was an important source of calcium and provided approximately one-third of the total protein and vitamin A in the meal. The vegetable/fruit component was the major source of vitamins A and C. The grain/bread component provided approximately 20% of the carbohydrates among five meal components. The miscellaneous component affected the sodium and fat content of the menus. Menu planners can use the results of this study to enhance their knowledge of the nutrient contributions of each meal component and as inputs for planning menus that meet children`s nutritional requirements. 2Comparison of Websites Offering Nutrition Services Controlled by Registered Dietitians and Those Controlled by Non-dietitian Nutrition Consultants

Health care is one of the most popular reasons for accessing the Internet. Of concern is the amount of information from disreputable sources available on the Internet. A review of websites offering nutrition consulting services suggests sites are controlled by both registered dietitians and non-dietitian professionals marketing themselves as nutrition consultants. The purpose of this study was to investigate structure and content of websites controlled by registered dietitians and non-dietitians professionals marketing themselves as nutritionists or nutrition consultants. Internet search queries of "dietitian", "dietitian consultant", and "nutrition consultant" were completed for website selection. Thirty websites controlled by registered dietitians and 10 websites controlled by nutrition consultants were reviewed using an 18-item website evaluation instrument developed for this study. Five evaluators were recruited from the dietetics program at the University of Kentucky. Overall, websites controlled by registered dietitians ranked higher than websites controlled by nutrition consultants in a majority of categories. Sites controlled by registered dietitians ranked statistically higher for the following categories: "accuracy of information"(p<.000l), "inclusion of professional resume of owner or primary manager" (p<.05), and "explanation of the affiliation to external links"(p<.05). A majority of sites controlled by both dietitians and nutrition consultants achieved a poor ranking in regards to provision of a legal disclaimer and inclusion of a privacy policy. Prior studies suggest personal privacy is the most important concern for consumers accessing health information on the Internet. Findings from this project will benefit dietitians to assist in development of reputable nutrition related websites. (J Community Nutrition 8(1): 9~15, 2006)

This paper describes a methodology for conducting Community Nutrition research with rather than on people in a community to generate grounded theory. This collaborative grounded theory methodology incorporates local knowledge and wisdom and builds community leadership capacity through engaging community-based professionals and para-professionals in the research process. In addition to building capacity for participation and leadership in research, education and action, this approach can increase the validity and value of the research and facilitate its application in community led programs. The methodology has five components: background, study design, data gathering, data analysis and interpretation, and application of findings in community programming. Three stages of the data analysis component focus sequentially on each interview independently, comparing across interviews, and systematically testing theory developed in the first two. Disparities in health and disease between various population subgroups, such as racial and ethnic groups, are a major focus of public health research but also pose considerable challenges. Diet is a key contributor to disparities in many chronic diseases and conditions. Therefore, in order to understand and address racial and ethnic health disparities, it is important to characterize the dietary patterns of the populations of interest. African Americans are at higher risk for many diet-related chronic disease conditions, such as obesity, type II diabetes, cardiovascular disease, and many cancers relative to other racial/ethnic groups in the United States. In this report, I describe the diet-related chronic disease profiles of African Americans, characterize their dietary patterns and food preferences, identify demographic, psychosocial, environmental, and cultural factors that may affect their dietary choices, and propose strategies for improving the dietary and health profiles of African Americans. 5A Comparison of Obesity Prevalence between Korean-American Children and Korean Children

This study is to compare the prevalence of obesity between Korean-American children and Korean children, and to investigate the role of environmental factors in obesity development. Prevalence of child obesity is compared by their residence, parents` anthropometric data, education and occupation, and the length of immigration, and birth place of the children. A total of 593 children between the ages of 9 and 12 were examined. 262 Korean-American children (KcUS group) from New Jersey, USA and 331 Korean children (KcK group) from Seoul, Korea were compared. KcUS group showed a higher obesity rate (male: 12.6% and female: 8.2%), compared to KcK group (male: 8.0% and female: 5.1%). KcK male children showed lower weight and prevalence of obesity than Korean-American male children who lived in the United States for more than three years. Korean-American female children had higher weight and obesity rate than Korean female children. Waist circumference and hip circumference were also higher in obese children in both KcK and KcUS groups. The children who live in America had an odds ratio of 1.69 to be obese compared to KcK, while those born in America and those who have lived in America for more than 3 years had odds ratios of 1.53 and 1.25 to be obese, respectively. This study found that environmental factors, immigration to America for instance, could playa bigger role in child obese development than the genetic factor. 6Self-rated Health and Its Indicators: A Case of the 2001 Korean National Health and Nutrition Examination Survey

There were numerous evidences that subjective health evaluation was a powerful indicator for morbidity and mortality in many countries. Since self-rated health (SRH) was a reasonable health measure, identifying predictors for SRH would be beneficial for assessment of overall health, monitoring health status, and development of health promotion programs. Health risks, health behavior, socioeconomic characteristics and social capital were potential indicators for SRH. We examined association. between SRH and indicators such as health risk factors, subjective living condition, income, education level and dietary variety score. Total 4,262 subjects, aged between 20 and 69 years old, were selected from KNHANES 2001; those who completed health examination, nutrition survey, and provided their socioeconomic information. Results of logistic regression showed that it was likely to have better SRH for those who were younger, male and have higher education, higher income, better living condition, no metabolic syndrome and higher dietary variety. This study intended to enhance understanding of concept and measurement of service quality and analyzed studies investigating dimension and attributes of service quality in both Korea and international foodservice industries. This study summarized many methodological issues related to service quality measurement, especially SERVQUAL. SERVQUAL has been criticized because performance-expectation difference operationalization threatened reliability and discriminant validity including shared method variance. Researcher suggests that future studies should understand clearly the concept of service quality and methodological issues of SERVQUAL prior to adapting SERVQUAL itself.
